Fluffy scones with lady’s clotted cream and jam

Perfect for those looking to satiate their appetite while sipping their afternoon tea, this classic scone recipe uses almost identical ingredients to those from the Bridgerton time period:

Ingredients:

  • 240g of all-purpose flour
  • 50g of granulated sugar
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of salt
  • 115g of cold unsalted butter, cut into small pieces
  • 160g of heavy cream
  • 1 teaspoon of vanilla extract
  • 1 large egg
  • Icing sugar to sieve on
  • Jam and cream of your choosing

Method:

  1. Preheat your oven to 200°C and then line a baking sheet with either parchment paper or lightly grease it.
  2. In a large mixing bowl, whisk together your flour, sugar, baking powder, and salt until well combined.
  3. Add the cold butter pieces to the dry ingredients. Then, using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining.
  4. Next, in a separate bowl, whisk together your heavy cream, vanilla extract, and egg until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; your dough should only be slightly sticky.
  6. Turn your dough out onto a lightly floured surface and gently pat it into a circle about 2.5 cm thick.
  7. Using a sharp knife or a bench scraper, cut your dough into 8 equal wedges.
  8. Transfer your wedges to the prepared baking sheet, leaving some space between each scone.
  9. Bake your scones in the preheated oven for 15-18 minutes, or until they’re golden brown on top and cooked through. Then remove them from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

White chocolate and raspberry royal regency cake

Few table treats flaunt their decadence quite like the perfectly baked cake – and this white chocolate and raspberry combination is no exception. With its exquisitely layered frosting, such a dessert is sure to be the belle of your table’s ball:

Ingredients:

For the cake:

  • 180g of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 120g of unsalted butter, softened
  • 200g of granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon of vanilla extract
  • 200ml of buttermilk
  • 85g of white chocolate chips
  • 65g of fresh raspberries, washed and dried

For the frosting:

  • 115g of unsalted butter, softened
  • 225g of white chocolate, chopped
  • 220g of powdered sugar, sifted
  • 1 teaspoon of vanilla extract
  • 2-3 tablespoons of heavy cream

Method:

For the cake:

  1. Preheat your oven to 175°C and grease and flour two 8-inch round cake pans or line them with parchment paper.
  2. In a medium bowl, whisk together your flour, baking powder, baking soda, and salt and set it aside.
  3. Next, in a large mixing bowl, beat your softened butter and granulated sugar together until light and fluffy (this should take about 2-3 minutes).
  4. Then add your eggs in one at a time, beating your mixture well after each addition before mixing in your vanilla extract as well.
  5. Following this, gradually add your dry ingredients to your wet ingredients, alternating between your dry mix and your buttermilk, and beginning and ending with the dry ingredients. Mix until just combined and then gently fold in your white chocolate chips and fresh raspberries into the batter.
  6. Divide your batter evenly between your prepared cake pans and smooth the tops with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the centre of the cakes comes out clean.
  7. Finally, remove your cakes from the oven and allow them to cool in their pans for 10 minutes before transferring them to a wire rack to cool completely.

For the frosting:

  1. In a heatproof bowl, set over a pot of simmering water (using the double boiler method) and melt your white chocolate, stirring occasionally until smooth. Then remove it from heat and let it cool slightly.
  2. Next, in a large mixing bowl, beat your softened butter until creamy and then add your melted white chocolate and vanilla extract, mixing everything together until well combined.
  3. Finally, gradually add the sifted powdered sugar (half at a time), and thoroughly mix everything after each addition. Then add your heavy cream, one tablespoon at a time, until the desired consistency is reached. When properly mixed, your frosting should be smooth and spreadable.

Assembling the cake:

  1. Place one cooled cake layer on a serving plate or cake stand and spread a generous layer of frosting evenly over the top of the cake layer.
  2. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  3. Chill the cake in the refrigerator for about 30 minutes to set the frosting before serving.

Ingredients:

For the cupcakes:

  • 180g of all-purpose flour
  • 1 and 1/2 teaspoons of baking powder
  • 1/4 teaspoon of salt
  • 120g of unsalted butter, softened
  • 150g of granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons of vanilla extract
  • 125ml of milk

For the buttercream icing:

  • 240g of unsalted butter, softened
  • 440g of powdered sugar, sifted
  • 2-4 tablespoons of heavy cream or milk

  • Food colouring of your choice

Method:

For the cupcakes:

  1. Preheat your oven to 175°C and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together your flour, baking powder, and salt and then set it aside.
  3. Next, in a large mixing bowl, beat your softened butter and granulated sugar together until light and fluffy (this should take about 2-3 minutes).
  4. Then, add your eggs one at a time, beating your mixture well after each addition before mixing in your vanilla extract as well.
  5. From here, gradually add your dry ingredients to the wet ingredients, alternating between your dry ingredients and your milk, but beginning and ending with your dry ingredients, mixing everything together until just combined, though be careful not to overmix it.
  6. Divide the batter evenly among the cupcake liners, filling each liner about two-thirds full.
  7. Finally, bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the centre of a cupcake comes out clean. Remove your cupcakes from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

For the buttercream icing:

  1. In a large mixing bowl, beat your softened butter until creamy and then gradually add your sifted powdered sugar a quarter at a time, making sure to mix everything well after each addition.
  2. Next, add your vanilla extract and 2 tablespoons of heavy cream or milk to your mixture, before beating your mixture to form a smooth and creamy consistency. If the icing is too thick, add more cream or milk, one tablespoon at a time, until the desired consistency is reached.
  3. Finally, add your food colouring to achieve the desired colour for your icing, mixing until the colour is evenly distributed.

Decorating the cupcakes:

  1. Once your cupcakes are completely cooled, use a piping bag fitted with your desired tip (such as a star tip) to pipe the buttercream icing onto the cupcakes.
  2. Alternatively, you can spread the icing onto the cupcakes with a knife or offset spatula for a smoother finish. Serve and enjoy your delicious homemade cupcakes with buttercream icing!

Cheese and chutney rolls

A regency take on the traditional roll, our cheese and chutney rolls are an ideal vegetarian alternative to the classic sausage roll that was invented around the Bridgerton time period:

Ingredients:

For the dough:

  • 300g of all-purpose flour
  • 1 tablespoon of granulated sugar
  • 1 teaspoon of salt
  • 2 and 1/4 teaspoons of instant yeast
  • 250ml of warm milk (about 45°C)
  • 2 tablespoons of unsalted butter, melted

For the filling:

  • 180g of chutney (such as mango chutney or onion chutney)
  • 330g of shredded cheese (cheddar, mozzarella, or your favourite cheese)

For brushing:

  • 2 tablespoons of unsalted butter, melted

Instructions:

For the dough:

  1. In a large mixing bowl, combine your flour, sugar, salt, and instant yeast.
  2. Then add your warm milk and melted butter to the dry ingredients, mixing until it forms a dough.
  3. Knead your dough on a lightly floured surface for about 5 minutes, or until it becomes smooth and elastic.
  4. Finally, place your dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

Assembling the rolls:

  1. Preheat your oven to 190°C and grease a baking dish or line it with parchment paper.
  2. Next, punch down your risen dough and transfer it to a lightly floured surface before rolling it out into a rectangle about 6mm thick.
  3. Spread the chutney evenly over your dough, leaving a small border around the edges.
  4. Sprinkle your shredded cheese over your chutney, covering the surface evenly. Then, starting from one of the longer edges, tightly roll up the dough into a log.
  5. Finally, use a sharp knife to slice your log into mini rolls about 2.5cm thick and place them on the prepared baking dish, leaving a little space between each roll.

Free-range egg and watercress

Ingredients:

  • 6 hard-boiled eggs, peeled and chopped
  • 60ml of mayonnaise
  • 1 tablespoon of Dijon mustard
  • 2 tablespoons of finely chopped fresh chives
  • 1 bunch of fresh watercress, washed and trimmed
  • Salt and pepper, to taste

Beef and horseradish mayonnaise

Ingredients:

  • 60ml of mayonnaise
  • 2 tablespoons of prepared horseradish (adjust to taste)
  • 1 teaspoon of Dijon mustard
  • 1 teaspoon of lemon juice
  • Salt and pepper, to taste

Prawn mayonnaise

Ingredients:

  • 450g of cooked and peeled prawns, chopped

Last, but by no means least, no Bridgerton viewing party would be complete without a stylish co*cktail to go with your snacks. And while co*cktails might not have been around in the 1800s, our special drink is very much in keeping with the Bridgerton theme:

Ingredients:

  • 60ml of gin
  • 30ml of Earl Grey tea, cooled
  • 15ml of fresh lemon juice
  • Ice cubes
  • 1 orange slice per co*cktail

Instructions:

  1. Brew a cup of Earl Grey tea and let it cool to room temperature.
  2. Next, in a co*cktail shaker, combine your gin, cooled Earl Grey tea, and fresh lemon juice, filling up the rest of your shaker with ice cubes.
  3. Shake your mixture vigorously for about 15-20 seconds to chill the ingredients and then strain your co*cktail into a chilled martini glass.
  4. Garnish with a slice of orange and serve!
