With only 5 ingredients this lolly slice recipe is so delicious - a simple twist on classic Kiwi lolly cake.

After the popularity of my classic lolly cake I thought it was time I posted a recipe for my lolly slice. I actually end up making it in slice form more often as it is much quicker to make in a slice tin than form into logs etc.

This lolly slice recipe is simple to make and takes a few minutes. It only has 5 ingredients: condensed milk, coconut, malt biscuits, butter and fruit puffs. You can use explorer lollies, fruit puffs or soft banana lollies work well too.

Lollie slice is a favourite in our family, especially at kids birthday parties. My boys are always wanting to try a piece straight after it is sliced.

First of all melt the butter and condensed milk together. Then add to the crushed biscuits and chopped fruit puffs.

Mix it all together then tip into a lined tin. Spread it out to the edges then sprinkle coconut over the top. Set in the fridge for at least 2 hours then slice into bite sized pieces. Store in the fridge until ready to use.

HERE ARE SOME COMMON QUESTIONS ABOUT Lolly slice:

How long does lolly slice take to set? It takes around 1-2 hours in the fridge (even better overnight) but you can speed up the process by putting it into the freezer for 20 minutes.

How to store lolly slice? I store mine in an airtight container in the fridge for up to a week, (if it lasts that long!).

How do you freeze lolly slice? Can it be frozen? Yes you can freeze it in an airtight container. It will last for approx 3 months in the freezer.

Can you make lolly slice without coconut? Yes you can just skip the step when you sprinkle over the coconut.

What can you use instead offruit puffsin lolly slice? There are lots of variations around. You can use Explorers orbananas. I have also seen versions withliquorice allsorts,clinkers and marshmallows.

What other biscuits can be used in lolly slice instead of Malt biscuits?You can other plain biscuits like Superwines, Milk Arrowroots or Maries. But Malt biscuits give it the most authentic taste. My friend Anna from Just a Mum has made a great version oflolly log with Girl Guide biscuits.

Who invented lolly cake? Where is it from?It originated in New Zealand in the 1940s according toWikipedia, but the inventor is not known.

HOW TO MAKE LOLLY BALLS OR TRUFFLES:

Combine all of the ingredients together then roll the mixture into individual balls. Roll each ball in coconut. Chill in the fridge until set.

With only 5 ingredients this lolly slice recipe is so delicious - a simple twist on classic Kiwi lolly cake.

Ingredients

  • 120g butter, melted
  • ½ cup sweetened condensed milk (160g)
  • 1 packet malt biscuits, crushed (250g)
  • 1 packet Fruit puffs or Explorers (150g), chopped
  • ¼ cup coconut

Instructions

  1. Line a slice tin (approx 20 x 20cm) with baking paper.
  2. Melt the butter and condensed milk together in the microwave.
  3. Add crushed biscuits and chopped fruit puffs and mix it all together.
  4. Tip mixture into the lined tin, spread it out to the edges. Press the mixture down firmly with the back of a metal spoon. Sprinkle coconut over the top.
  5. Chill in the fridge until set (at least 2 hours), then use a large knife to cut into slices.

  • You can speed up the setting process by putting it in the freezer for 20 minutes.
